Is it OK to eat salad in winter? 5 healthy salads for winter

As winter starts to creep in, we lose any desire to eat healthy salads.

If you’re anything like us you’re gravitating towards lighter healthier dinners.

These salads are healthy enough that you’ll feel virtuous, but substantial enough to be the main attraction at dinner time.

We’re not refraining from takeaways and carbs completely, but while it’s the start of the week and we’re feeling virtuous we’ll lean in to our healthy impulses with these recipes for substantial salads.

Soba Noodle Salad with Sesame Dressing

Soba can be tossed all together in advance and left to chill in the fridge until you’re ready to eat. Add the dressing just before serving to avoid the noodles going soggy.

Pea, Mint & Asparagus Salad Recipe with Saucy Smoked Haddock

Put spring in your salad with in-season asparagus and baby peas. Add Smoked Haddock, pearl barley or a bit of brown rice if you feel the need for carbs.

Thai Style Chili Shrimp on Warm Salad

This Thai-style prawn salad is a perfect hot weather dish.

This is delicious as it is, but for extra veggie points you could also use it as a filling for lettuce cups, using baby cos or romaine as a vehicle and folding everything into wee parcels.

This is a perfect warm weather meal because carbs and warm weather turn me into a fat sleepy Labrador; endless leaves don’t quite cut it either.

This salad ticks the satisfying-but-not-too-heavy box.

Persian Lamb Roast with Pomegranate and Cous Cous Salad

This delicious, texturally rich salad is perfect for entertaining. Serve it alongside other salads, dips and flatbreads as a Middle Eastern-inspired feast.
