As winter starts to creep in, we lose any desire to eat healthy salads.

Soba can be tossed all together in advance and left to chill in the fridge until you’re ready to eat. Add the dressing just before serving to avoid the noodles going soggy.

Put spring in your salad with in-season asparagus and baby peas. Add Smoked Haddock, pearl barley or a bit of brown rice if you feel the need for carbs.
