Baked Apples with Oatmeal

The perfect breakfast or brunch recipe with a good combination of taste and health.

Ingredients:

For baked apples

    • 6 apples

 

    • 2 ½ tbsp cold pressed virgin coconut oil

 

    • 1 tbsp sugar

 

    • 1 tbsp butter

 

    • 1 tsp cinnamon

 

    • ½ tsp vanilla essence

 

    • 1 cup apple cider vinegar

 

For oatmeal

    • 2 cups steel cut oats

 

    • 6 cups milk

 

    • 1 tsp cinnamon

 

    • ½ tsp vanilla essence

 

    • Dates – 5 to 6 nos (chopped)

 

    • Raisins (optional)

 

    • Nuts (almonds, pistachios- sliced)- 8-10 nos

Instructions:

    • Slice about half an inch from the top and bottom of each apple; enough on the bottom to hold the oatmeal. Then carefully cut out a ‘bowl’ like shape inside the apples, this could be done using a melon baller.

 

    • Preheat the oven to 375 degrees.

 

    • In a saucepan, add the virgin coconut oil, sugar, vanilla and cinnamon, stir until the sugar dissolves and then remove from the heat.

 

    • Apply this mixture on the insides and top of the apples and place in a baking pan.

 

    • Pour apple cider vinegar in the baking pan and cover it with aluminum foil and bake the apples for about 30 minutes or till softened.

 

    • To prepare the oatmeal while the apples bake, take a medium saucepan and prepare the steel cut oats with milk as directed on the oats packet.

 

    • During the last 5-7 minutes of cooking, add the cinnamon, vanilla, dates, raisins and some cut apple chunks (optional). Stir until combined and let it simmer till the oats are cooked.

 

    • Remove the baked apples and place them on a plate, fill the apples with the oatmeal mixture.

 

    • Garnish this with sliced almonds and pistachios.

 

Vanilla Apple Smoothie

Ingredients:

    • 1 medium apple

 

    • ½ tbsp honey

 

    • ¼ cup Almond milk or regular milk (unsweetened)

 

    • 2 tsp cold-pressed virgin coconut oil

 

    • 1 tbsp peanut butter

 

    • ½ of a large banana, frozen

 

    • 1 tsp vanilla extract

 

    • Pinch of ground cinnamon for serving

 

Instructions:

    • Wash, peel, and slice the apple into small pieces. Place it in the blender

 

    • Add in the remaining ingredients: milk, peanut butter, maple syrup, vanilla extract, and virgin coconut oil along with a few ice cubes for a thick texture and blend it together

 

    • Sprinkle the ground cinnamon on top

 

    • Enjoy the thick, healthy smoothie.
